Cook spinach in a large pot of boiling water until tender (about 5 min.). Drain, rinse and squeeze out excess moisture. Coarsely chop; set aside. In a large mixing bowl, combine yolks, spinach, cottage cheese and herbs; season to taste. Pour into a greased 8x8" square baking dish; bake in preheated 350° oven until set (about 45 min.). Cool; cut into squares.
