  • 8 cups spinach, washed, stems trimmed
  • 4 egg yolks, whisked until smooth
  • 2 cups cottage cheese
  • 2 tbsp. chopped fresh dill
  • 2 tbsp. chopped fresh Italian parsley
  • - salt, pepper and ground nutmeg, to taste
Instructions

Cook spinach in a large pot of boiling water until tender (about 5 min.). Drain, rinse and squeeze out excess moisture. Coarsely chop; set aside. In a large mixing bowl, combine yolks, spinach, cottage cheese and herbs; season to taste. Pour into a greased 8x8" square baking dish; bake in preheated 350° oven until set (about 45 min.). Cool; cut into squares.
