2 tsp. freshly chopped herbs, such as chives, Italian parsley and/or dill
- kosher salt and coarse ground black pepper, to taste
2 slices cooked bacon, crumbled
1/4 cup Kowalski's Coleslaw Dressing
4 slices sandwich bread, such as multigrain
Optional garnishes: lettuce, tomato slices and red onion
In a large mixing bowl, mix together eggs, mustard, herbs, salt and pepper; fold in bacon, then dressing. Scoop salad onto 2 slices of bread; garnish as desired. Cover with the remaining bread slices. Serve immediately.
